Ingredients
  

Cake Ingredients

  • 1 box yellow cake mix Use any brand preferred
  • 1 can (11 ounces) mandarin oranges, drained Fresh or canned mandarin oranges can be used
  • 1 cup vegetable oil
  • 4 large eggs

Topping Ingredients

  • 1 can (8 ounces) whipped topping
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup milk Any type of milk is acceptable

Garnish

  • to taste additional mandarin oranges Optional for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9x13 inch baking pan.
  • In a large mixing bowl, combine the yellow cake mix, drained mandarin oranges, vegetable oil, and eggs.
  • Use a hand mixer on medium speed to beat the mixture for about 2 minutes.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake the cake in the preheated oven for 30 to 35 minutes.
  • Check for doneness by inserting a toothpick into the center of the cake; it should come out clean.
  • Allow the cake to cool completely in the pan.

Topping Preparation

  • In another bowl, combine the whipped topping, instant vanilla pudding mix, and milk until smooth.

Assembly

  • Once the cake is cooled, spread the creamy mixture evenly over the top.
  • Garnish with additional mandarin oranges if desired.

Notes
