Ingredients

  • 1 package mandarin orange Jello
  • 1 cup cottage cheese Use low-fat for a healthier option.
  • 1 cup crushed pineapple (drained)
  • 1 cup Cool Whip Light Cool Whip can be used for a lower calorie version.

Optional topping

  • 1/2 cup chopped nuts Such as walnuts or pecans.

Instructions
 

Preparation

  • Boil water according to the package instructions for the mandarin orange Jello.
  • Once boiling, remove from the heat and mix in the Jello powder, stirring until completely dissolved.
  • Let the Jello cool for about 10 to 15 minutes, ensuring it is still liquid but not hot.

Mixing

  • In a separate bowl, combine cottage cheese, crushed pineapple, and Cool Whip. Stir until well blended.
  • Once the Jello has cooled, gently fold it into the cottage cheese mixture using a spatula.

Chill and Serve

  • Transfer the mixture to a serving dish or individual cups and refrigerate for at least two hours until set.
  • Sprinkle chopped nuts on top before serving, if desired.
