  • 4 cups mixed greens (spinach, arugula, or your choice) Rinsed and dried
  • 1 can mandarin oranges (11 oz), drained Juicy sweetness.
  • 1/4 cup red onion, thinly sliced Adds sharpness.
  • 1/2 cup sliced almonds or walnuts Toasted for flavor.
  • 1/2 cup crumbled feta cheese (optional) For creaminess.

Dressing Ingredients

  • 1/4 cup olive oil Base for the dressing.
  • 2 tablespoons apple cider vinegar Tangy flavor.
  • 1 tablespoon honey or maple syrup (optional) For sweetness.
  • to taste salt and pepper For seasoning.

Instructions
 

Preparation

  • Rinse the mixed greens under cold water and dry them well.
  • In a large bowl, add the mixed greens.
  • Open the can of mandarin oranges, drain them thoroughly, and sprinkle over the mixed greens.
  • Thinly slice a quarter cup of red onion and add it to the bowl along with the nuts.
  • If desired, crumble feta over the salad.

Dressing

  • In a separate bowl, whisk together olive oil and apple cider vinegar.
  • Add honey or maple syrup if desired, and season with salt and pepper.

Combining

  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately for the freshest taste, or chill briefly.
