  • 2 cups chicken breast, sliced
  • 1 piece ripe mango, diced Choose a ripe mango for maximum sweetness.
  • 1 piece bell pepper, sliced Any color bell pepper can be used.
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil For cooking.
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions
 

Cooking

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced chicken breast and cook for 5-7 minutes, stirring occasionally, until browned and fully cooked.
  • Add minced garlic and grated ginger to the skillet and cook for an additional minute.
  • Stir in the sliced onion and bell pepper; cook for 3-4 minutes until they soften but maintain a crunchy texture.
  • Add the diced mango and soy sauce, stirring gently to combine.
  • Season with salt and pepper to taste, and cook for another 2 minutes.

Serving

  • Serve hot over steamed rice or noodles, garnished with green onions or sesame seeds if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave, adding a splash of water or broth to keep chicken moist.
