Ingredients
  

For the crust and topping

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened Ensure it's at room temperature for easy mixing.
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the mango filling

  • 2 cups ripe mango, peeled and diced Choose slightly soft mangoes for best flavor.
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  • Add the softened butter to the dry ingredients and mix until it resembles coarse crumbs.
  • Stir in the oats evenly into the mixture and reserve one cup for the topping.
  • Press the remaining mixture firmly into the bottom of the prepared baking dish.

Mango Filling

  • In another bowl, combine the diced mango, cornstarch, lemon juice, and vanilla extract. Mix until well coated.
  • Pour the mango mixture over the crust and spread it evenly.
  • Sprinkle the reserved crumb mixture on top of the mango filling.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
  • Allow the bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

These bars are delicious on their own, but serve well with vanilla ice cream or whipped cream. Optionally, drizzle honey or agave for added sweetness.
