Ingredients
  

For the Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs Let sit at room temperature before use.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup maraschino cherries, drained and chopped Aim for bite-sized pieces.
  • 1 cup semisweet chocolate chips Feel free to experiment with other types of chocolate.

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking soda, and salt. Whisk to evenly distribute these ingredients.
  • Gradually add the dry mixture to the wet mixture and blend until just combined.
  • Fold in the chopped cherries and chocolate chips.

Baking

  • Drop rounded spoonfuls of cookie dough onto the prepared baking sheets, spacing them about two inches apart.
  • Bake in the preheated oven for 10 to 12 minutes, until the edges are golden brown and the centers are soft.
  • Allow the cookies to cool on the baking sheets for about five minutes before transferring them to wire racks to cool completely.

Notes

For an extra touch, serve with cold milk or vanilla ice cream. Consider adding chopped cherries on top for garnish.
