  • 4 cups chicken broth Homemade broth recommended for best flavor
  • 1 cup heavy cream For a dairy-free option, substitute with coconut cream
  • 1 cup grated Parmesan cheese Dairy-free alternative: nutritional yeast
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt and pepper to taste

Preparation

  • Gather all ingredients and prep your workspace for efficient cooking.
  • Heat a few tablespoons of olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the pot, sauté for 3-4 minutes until the onion is translucent.
  • Stir in the shredded chicken, sun-dried tomatoes, and spinach, cooking for another 3-5 minutes until spinach wilts.
  • Pour in the chicken broth, stirring to combine, and bring to a gentle simmer.
  • Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float.
  • Stir in the heavy cream and grated Parmesan cheese until well combined.
  • Season with salt and pepper to taste, adjusting as necessary.
  • Serve warm, optionally garnished with additional Parmesan and a slice of crusty bread.

Notes
