  • 1 pound chicken breast, diced
  • 8 ounces egg noodles
  • 1 cup sun-dried tomatoes, chopped
  • ½ cup parmesan cheese, grated For garnishing
  • 6 cups chicken broth High-quality or homemade preferred
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 tablespoon Italian herbs Adjust based on preference

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic. Sauté until soft and fragrant, about 3-4 minutes.
  • Add diced chicken breast and cook for about 5-7 minutes, until browned.
  • Pour in chicken broth and bring to a boil. Add salt and pepper to your taste.
  • Stir in egg noodles and chopped sun-dried tomatoes. Let simmer for 6-8 minutes until noodles are tender.
  • Reduce heat, stir in heavy cream and grated parmesan cheese until combined and creamy.
  • Add Italian herbs, adjusting seasoning with more salt and pepper if necessary.
  • Allow to simmer a few more minutes until thickened to your liking.
  • Ladle into bowls and garnish with extra parmesan or fresh herbs if desired.
