Ingredients
  

For the Soup Base

  • 1 teaspoon olive oil For sautéing
  • 1 to 1 ½ pounds boneless skinless chicken breasts or thighs, diced into 1-inch pieces
  • 2 teaspoons Italian seasoning, divided Use one teaspoon for the chicken and one for the soup
  • Salt to taste Salt
  • Pepper to taste Pepper
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 cloves garlic, minced
  • ¼ cup flour For thickening
  • 2 tablespoons tomato paste (optional) For added flavor
  • 6-8 cups chicken broth
  • 6 oz pasta Any type of pasta can be used
  • 1 cup heavy whipping cream For creaminess
  • ½-1 cup grated Parmesan Reggiano cheese To taste
  • 2 ½-3 cups fresh spinach Can substitute with other greens

Instructions
 

Preparation

  • Heat one teaspoon of olive oil in a large pot over medium heat.
  • Season the diced chicken pieces with salt, pepper, and one teaspoon of Italian seasoning.
  • Add the seasoned chicken to the pot, cooking until browned, about 5-7 minutes. Remove and set aside.

Cooking

  • Sauté the diced carrots, celery, onions, and sundried tomatoes in the same pot until softened, about 4-5 minutes.
  • Add the minced garlic during the last minute to avoid burning.
  • Sprinkle the flour over the vegetables and stir to coat.
  • If using, stir in the tomato paste.
  • Gradually whisk in the chicken broth and bring to a boil.
  • Reduce heat and simmer for 10 minutes.
  • Return the chicken to the pot along with the pasta, heavy cream, and remaining teaspoon of Italian seasoning. Stir to combine.
  • Cook until the pasta is tender, about 10-12 minutes.

Finishing Touches

  • Stir in the grated Parmesan cheese and fresh spinach until the spinach wilts.
  • Serve hot and enjoy.

Notes
