Ingredients
  

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes Including juices
  • 1 cup chicken broth
  • 1 cup heavy cream Can substitute with half-and-half for a lighter soup
  • 1 packet ranch seasoning mix
  • 1 teaspoon Italian seasoning Customize with fresh herbs if desired
  • Salt and pepper To taste
  • Fresh parsley For garnish

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts into the slow cooker.
  • In a mixing bowl, combine the diced tomatoes (including the juices), chicken broth, heavy cream, ranch seasoning mix, Italian seasoning, salt, and pepper. Stir well.
  • Pour the mixture evenly over the chicken in the slow cooker.

Cooking

  • Cover the slow cooker and set it to low for 6 to 7 hours, or high for 3 to 4 hours.
  • After the cooking time, shred the chicken using two forks directly in the slow cooker.

Serving

  • Give it a good stir and ladle the soup into bowls. Garnish with fresh parsley.
