Ingredients
  

  • 9 oz rigatoni or pasta of choice
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 5 oz sun-dried tomatoes, drained & chopped
  • 1 teaspoon Italian seasoning
  • 2 teaspoons paprika
  • 3/4 cup heavy cream
  • 1/2 cup vegetable stock
  • 1/4 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 teaspoons lemon juice (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions
 

  • Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/4 cup pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Stir in sun-dried tomatoes, Italian seasoning, and paprika. Cook for another 2-3 minutes to meld the flavors.
  • Reduce heat to low and pour in the heavy cream and vegetable stock. Add reserved pasta water and grated Parmesan cheese, stirring to combine.
  • Season with salt and pepper to taste. Let the sauce simmer for 4-5 minutes until it thickens to your desired consistency.
  • Fold in chopped basil, then add the cooked pasta to the skillet. Toss gently to coat the pasta in the creamy sauce.
  • If the sauce is too thick, add more vegetable stock or pasta water. Optionally, stir in lemon juice and red pepper flakes for added flavor.
