Instructions
Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/4 cup pasta water before draining.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Stir in sun-dried tomatoes, Italian seasoning, and paprika. Cook for another 2-3 minutes to meld the flavors.
Reduce heat to low and pour in the heavy cream and vegetable stock. Add reserved pasta water and grated Parmesan cheese, stirring to combine.
Season with salt and pepper to taste. Let the sauce simmer for 4-5 minutes until it thickens to your desired consistency.
Fold in chopped basil, then add the cooked pasta to the skillet. Toss gently to coat the pasta in the creamy sauce.
If the sauce is too thick, add more vegetable stock or pasta water. Optionally, stir in lemon juice and red pepper flakes for added flavor.
