Ingredients
  

For the Salmon

  • 3-4 pieces salmon fillets, skin removed Look for bright colored, fresh salmon.
  • 2 tablespoons olive oil For searing the salmon.
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon red pepper flakes Adjust based on your spice preference.
  • 1/4 teaspoon salt To taste.
  • 1/4 teaspoon black pepper To taste.

For the Sauce

  • 1 cup unsalted chicken stock Use homemade or store-bought.
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes Packaged or homemade.
  • 5 cloves garlic, minced Freshly minced for best flavor.
  • 1/2 cup Parmesan cheese, freshly shredded Grate it fresh for better texture.

For Garnish

  • to taste fresh basil For garnishing before serving.

Instructions
 

Preparation

  • In a small bowl, combine dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper. Stir until well mixed.
  • Generously sprinkle half of the seasoning mixture over the salmon fillets and rub it in gently.

Cooking

  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Sear the salmon fillets for about 5 minutes on each side until golden brown. Remove and set aside.
  • In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  • Pour in chicken stock, scraping up any brown bits from the pan.
  • Stir in heavy cream, Parmesan, and the remaining seasoning mixture; combine well.
  • Allow the sauce to simmer for 10-15 minutes until thickened.
  • Return the seared salmon to the skillet, spooning sauce over each fillet and cooking for an additional 3-5 minutes or until desired doneness.

Serving

  • Plate the salmon on a serving dish, drizzle with sauce, and garnish with chopped basil.
