Ingredients

  • 2 ripe bananas
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon matcha powder
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven: Set it to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • Mash the bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth, leaving a few small chunks for texture.
  • Mix the wet ingredients: Add the melted butter, eggs, vanilla extract, and sugar to the mashed bananas. Whisk everything together until fully combined.
  • Sift dry ingredients: In a separate bowl, sift together the flour, matcha powder, baking soda, and salt. This ensures an even distribution of the matcha and helps the bread rise evenly.
  • Combine the wet and dry ingredients: Gradually add the dry mixture to the wet ingredients. Stir gently until just combined—be careful not to overmix, or the bread may turn out dense.
  • Pour into the pan: Transfer the batter to your prepared loaf pan and spread it evenly with a spatula.
  • Bake: Place the pan in the oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and enjoy: Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy your homemade, moist matcha banana bread!
