Ingredients
  

For the Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon black pepper

For the Sandwich Assembly

  • 4 pieces sandwich buns
  • 1 cup shredded lettuce
  • 1 piece avocado, sliced
  • 1/2 cup fresh pineapple, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce (optional) Add for heat

Instructions
 

Preparation and Marination

  • In a mixing bowl, combine soy sauce, pineapple juice, brown sugar, olive oil, garlic powder, ginger powder, black pepper, and salt to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are evenly coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-3 hours or overnight.

Cooking the Chicken

  • Preheat the grill or stovetop grill pan over medium-high heat.
  • Remove the chicken from the marinade and let excess marinade drip off.
  • Grill the chicken for about 6-7 minutes on each side until cooked through, reaching an internal temperature of 165°F (75°C).
  • Let the chicken rest for a few minutes before slicing.

Assembling the Sandwich

  • Mix mayonnaise and sriracha sauce (if using) in a small bowl.
  • Toast the sandwich buns on the grill until golden brown.
  • Spread a generous amount of shredded lettuce on the bottom half of each bun, followed by sliced grilled chicken, avocado, and fresh pineapple.
  • Drizzle the spicy mayo over the filling and place the top of the bun on each sandwich.

Serving
