Mediterranean Chicken Wraps

Ingredients
  

Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Wrap Assembly

  • 4 large whole wheat tortillas or wraps
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup hummus
  • 2 cups mixed greens (such as spinach or arugula)
  • 1 pieces juice of 1 lemon
  • Optional: tzatziki sauce for serving

Instructions
 

Preparation

  • Preheat your grill or stovetop grill pan to medium-high heat.
  • Combine olive oil, dried oregano, ground cumin, minced garlic, salt, and pepper in a small bowl to create the marinade.
  • Coat chicken breasts thoroughly in the marinade and let sit for at least 15 minutes.

Cooking

  • Grill the chicken breasts for about 6 to 7 minutes on each side until they are golden brown and reach an internal temperature of 165°F.
  • Remove the chicken from the grill and let it rest.

Wrapping

  • Lay each tortilla flat and spread hummus in the center.
  • Slice the grilled chicken into thin strips and layer on top of the hummus.
  • Top with cherry tomatoes, cucumber, red onion, feta cheese, olives, and mixed greens.
  • Squeeze lemon juice over the fillings, fold the sides of the tortilla inward, and roll from the bottom up to wrap tightly.
  • Slice each wrap in half diagonally and serve immediately.

Notes

For enhanced flavor, marinate the chicken longer if possible. Avoid overstuffing the wraps to maintain structure. Consider adding seasonal vegetables for freshness.
