Ingredients
  

For the Quesadillas

  • 4 pieces flour tortillas (or gluten-free tortillas)
  • 1 cup fresh spinach
  • 1 medium tomato, diced
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 small red onion, thinly sliced
  • Ground pepper, to taste
  • Olive oil for cooking

Instructions
 

Preparation

  • In a mixing bowl, combine the fresh spinach, diced tomato, thinly sliced red onion, shredded mozzarella, crumbled feta cheese, and season with ground pepper. Mix all the ingredients together until well combined.

Assembly

  • Lay a tortilla flat on a clean surface. Take about a third of the filling mixture and spread it onto one half of the tortilla. Carefully fold the tortilla over to cover the filling.

Cooking

  • Heat a skillet over medium heat and add a light coating of olive oil. Place the assembled quesadilla in the skillet and cook for 3-4 minutes on each side, pressing down gently with a spatula while cooking until golden brown and crispy.

Serving

  • Slice the quesadilla into 3 to 4 wedges and serve with dips like Greek yogurt or hummus.

Notes

For a healthy alternative, use whole wheat or gluten-free tortillas. Feel free to experiment with other fillings like roasted red peppers or olives.
