Mediterranean Steak Bowl

Ingredients
  

For the Steak Marinade

  • 1 pound steak (sirloin or flank steak)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • to taste salt and pepper

For the Bowl

  • 2 cups cooked quinoa or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • 1 cup red cabbage, shredded
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup tahini or your choice of dressing
  • 1 lemon juice of 1 lemon
  • 1/4 cup fresh parsley, chopped

Instructions
 

Preparation

  • Start by marinating the steak. In a mixing bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Place the steak in the bowl, coating it well with the marinade. Allow it to marinate for at least 30 minutes.

Cooking the Steak

  • Heat a grill pan or stovetop grill over medium-high heat. Once hot, place the marinated steak on the grill. Cook the steak for about 4-5 minutes on each side for medium-rare.
  • Remove the steak from the grill and let it rest for a few minutes before slicing it against the grain.

Assembling the Bowl

  • While the steak rests, prepare the base of your bowl by arranging cooked quinoa or couscous.
  • Layer cherry tomatoes, cucumber, bell pepper, shredded cabbage, and crumbled feta on top of the grains.
  • Slice the rested steak and arrange it on top of the vegetables. Drizzle lemon juice and tahini dressing over everything.
  • Sprinkle fresh parsley for a finishing touch and serve immediately.

Notes
