Ingredients
  

For the stuffing

  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, chopped Use fresh spinach for best flavor.
  • 1/2 cup feta cheese, crumbled Feta adds a creamy texture.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt to taste salt and pepper

For the chicken

  • 4 pieces chicken breasts Choose high-quality chicken breasts.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a medium mixing bowl, combine the chopped sun-dried tomatoes, fresh spinach, crumbled feta cheese, minced garlic, olive oil, oregano, basil, salt, and pepper.
  • Mix these ingredients until well combined.
  • Carefully slice each chicken breast horizontally to create a pocket.
  • Generously stuff each chicken breast with the prepared filling.
  • Place the stuffed chicken into a baking dish and drizzle a little olive oil over each breast.

Cooking

  • Bake in the preheated oven for 25 to 30 minutes.
  • Ensure the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and allow to rest for a few minutes before serving.
