  • 2 pieces ripe avocados Choose ripe avocados that yield slightly to pressure.
  • 4 medium tomatillos, husked and rinsed Look for firm tomatillos with bright green skins.
  • 1 piece jalapeño, seeds removed for less heat Adjust the quantity based on spice preference.
  • 1 small red onion, chopped
  • 1 clove garlic, minced
  • 1 piece lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • to taste salt Adjust according to preference.

Preparation

  • Remove the husks from the tomatillos and rinse them under running water. Cut them in half and place them in a blender or food processor.
  • Add the jalapeño, red onion, garlic, and lime juice to the blender. Blend until the mixture is fairly smooth but still has some texture.
  • Scoop out the avocados and add them to the mixture. Blend again just until combined; keep some avocado chunks for added creaminess and texture.
  • Add the chopped cilantro and a pinch of salt. Stir the salsa gently to combine all ingredients.
  • Taste and adjust seasoning by adding more salt or lime juice, if desired.
  • Transfer the salsa into a serving bowl. It can be enjoyed fresh or chilled in the refrigerator for about 30 minutes for the flavors to meld.

Notes

Enjoy the salsa with tortilla chips, tacos, grilled meats, or as a topping for sandwiches. If it’s too tart, add a pinch of sugar. For depth of flavor, consider roasting the tomatillos and jalapeño before blending.
