Mexican Spaghetti Squash Casserole

Ingredients

  • 2 lbs spaghetti squash
  • 1 lb ground turkey Can substitute with ground chicken or plant-based alternative.
  • 2 pieces bell peppers, chopped Use any color or a mix for added visual appeal.
  • 11.5 oz corn, canned and drained
  • 18 oz black beans, canned, drained and rinsed
  • 4.3 oz green chiles, canned
  • 18 oz diced tomatoes, canned with juices
  • 10 oz enchilada sauce, canned
  • 2 cups cheese (mozzarella or Monterey Jack, shredded) Use pepper jack for a spicier version.

Spices

  • to taste chili powder

  • to taste salt Adjust to your preferred taste.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  • Cook the spaghetti squash by microwaving on high for about 10-12 minutes or roasting in the oven at 375°F for 30-40 minutes until tender.
  • Let the squash cool slightly before shredding it into strands with a fork.

Cooking the Turkey

  • In a nonstick skillet, cook the ground turkey over medium heat for about 7-10 minutes until browned and cooked through.

Mixing and Baking

  • In a large mixing bowl, combine the cooled, shredded spaghetti squash, browned turkey, chopped bell peppers, corn, drained black beans, green chiles, diced tomatoes (with juices), enchilada sauce, chili powder, cumin, and salt.
  • Mix everything until well combined.
  • Grease a 9x13 inch casserole dish and pour the mixture into it, spreading evenly.
  • Sprinkle shredded cheese evenly over the top.
  • Cover the dish with aluminum foil and bake in preheated oven for 45 minutes.
  • After 45 minutes, remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  • Let the casserole rest for about 10 minutes before serving.

Notes

For extra flavor, garnish with fresh cilantro, diced jalapeños, or a drizzle of sour cream before serving. This casserole is perfect with a side salad or tortilla chips.
