Mexican Tomatillo Green Sauce

Ingredients

  • 1 pound tomatillos, husked and rinsed
  • 1-2 pieces jalapeño peppers, stems removed Adjust for heat preference
  • ¼ cup fresh cilantro, roughly chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • to taste salt
  • as needed water Add to adjust consistency

Preparation

  • Preheat a skillet over medium-high heat.
  • Add tomatillos and jalapeños to the skillet and roast them until slightly charred and softened, about 8-10 minutes, turning frequently.
  • Remove roasted tomatillos and jalapeños from the skillet and let them cool for a few minutes. Chop the jalapeños and set aside.

Blending

  • In a blender or food processor, combine the roasted tomatillos, chopped jalapeños, cilantro, onion, garlic, lime juice, and salt. Blend until smooth.
  • If the mixture is too thick, add water a little at a time until you reach your desired consistency.
  • Taste and adjust the salt, if necessary, and blend again to mix in any added salt.

Cooling and Storing

  • Transfer the sauce to a container and let it cool to room temperature before using or storing.

Notes

For best flavor, do not skip the roasting step. For a milder sauce, remove seeds from jalapeños before roasting. Experiment with different herbs or spices for unique variations.
