Preparation

  • Peel the potatoes and cut them into 1-2 inch chunks.
  • Place the potato chunks in a large pot and cover with salted water. Bring to a boil over medium-high heat.
  • Once boiling, reduce heat and let cook until tender, about 15-20 minutes.
  • Drain the potatoes well in a colander, then return them to the pot to steam for a minute.

Mixing

  • With the potatoes still warm, add the butter, sour cream, and cream cheese.
  • Mash the potatoes to your desired consistency, being careful not to over-mash.
  • Season with salt and pepper to taste.
