Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the filling

  • 4 packages (8-ounce) cream cheese, softened Use room temperature for best results
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

For the topping

  • 1 cup chocolate ganache For drizzling
  • 1 cup caramel sauce For drizzling
  • to taste sea salt Optional, for sprinkling

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with butter or non-stick spray.
  • In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined and the mixture resembles wet sand.
  • Press this mixture firmly into the bottom of the prepared springform pan to create an even crust.
  • In a large mixing bowl, beat the cream cheese until fluffy and smooth.
  • Gradually add the sugar and beat until well incorporated.
  • Mix in the sour cream and vanilla extract. Ensure the ingredients are fully combined.
  • Add the heavy cream and beat until the mixture is light and airy.

Baking

  • Pour the cheese mixture over the crust in the springform pan.
  • Bake for 55 to 60 minutes, or until the edge is set but the center still jiggles slightly.
  • Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for one hour.

Cooling and Serving

  • Remove the cheesecake from the oven and cool completely at room temperature.
  • Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  • Before serving, drizzle the chocolate ganache and caramel sauce over the top. Optionally sprinkle with sea salt.
