Ingredients
  

Cheesecake Filling

  • 8 oz cream cheese, softened Use block cream cheese for best results.
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream

Crust and Decoration

  • 1/4 cup crushed graham crackers For the base of each cheesecake.
  • Colorful sprinkles for decoration Use for festive touch.
  • Mini cupcake liners For easy serving and removal.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  • Add the sour cream and heavy cream, mixing until well incorporated and light and fluffy.
  • Line a mini muffin tin with mini cupcake liners.
  • Place about a teaspoon of crushed graham crackers at the bottom of each liner.
  • Pour the cheesecake mixture over the cracker crumbs, filling each liner about 2/3 full.

Baking

  • Bake the muffin tin in the preheated oven for 15-20 minutes until the tops are set but still a little jiggly.
  • Remove from the oven and cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  • Refrigerate the cheesecakes for at least 2 hours to let the flavors meld.

Serving

  • Sprinkle colorful decorations on top before serving.
  • Serve on a festive platter or cake stand. Consider serving with a scoop of whipped cream.
