Ingredients
  

For the cookie dough

  • 1 cup salted butter (at room temperature) Use high-quality butter for best results.
  • 1 cup white sugar
  • 1/2 teaspoon green food coloring Adjust as needed for desired hue.
  • 1 large egg Ensure it's at room temperature.
  • 2 teaspoons peppermint extract Opt for high-quality extract.
  • 2 cups all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips Plus additional for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line your baking sheets with parchment paper.
  • In a large mixing bowl, cream together the room-temperature salted butter and white sugar until light and fluffy, about three minutes.
  • Mix in the green food coloring to achieve your desired color.
  • Incorporate the egg and peppermint extract, mixing thoroughly.

Mixing Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • Gradually pour the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing.
  • Gently fold in the mini chocolate chips.

Baking

  • Using a cookie scoop or tablespoon, place rounded mounds of dough on the lined baking sheets, leaving two inches of space between each.
  • Bake in the preheated oven for approximately 11 minutes until they are lightly golden brown on the bottoms.
  • While still warm, sprinkle extra mini chocolate chips on top.
  • Allow cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Notes
