  • 1 cup rolled oats
  • 1/2 cup nut butter of your choice (almond, peanut, or cashew) Select your favorite nut butter for flavor.
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan version.
  • 1/2 cup chocolate chips (dairy-free if needed) Dark chocolate chips are recommended for richer flavor.
  • 1/4 cup protein powder (vanilla or chocolate flavor) Customize the flavor to your preference.
  • 1/2 teaspoon peppermint extract Adjust based on your mint preference.
  • 1 pinch salt
  • optional a handful of chopped nuts or seeds for added crunch Add-ins can enhance texture.

Preparation

  • In a mixing bowl, combine the rolled oats, nut butter, and honey (or maple syrup). Stir until all ingredients are well-combined.
  • Add the chocolate chips, protein powder, peppermint extract, and salt to the mixture. Mix thoroughly until everything is incorporated.
  • If the mixture seems too dry, add more nut butter or a splash of water to help it bind together.
  • Once you have a dough-like consistency, use your hands to form small balls, about one inch in diameter.
  • Place the balls on a baking sheet lined with parchment paper.
  • Refrigerate the balls for at least 30 minutes to help them firm up.
  • After chilling, your mint chocolate chip protein balls are ready to enjoy!

Notes

To enhance flavor, roll protein balls in desiccated coconut or crushed nuts before chilling. These protein balls can also be stored in an airtight container in the fridge for up to a week or frozen for up to three months.
