  • Tofu: 1/2 block firm or silken
  • Green onions: 2 sliced
  • Garlic: 2 cloves minced
  • Ginger: 1-inch piece grated
  • Soy sauce: 1 tablespoon
  • Spinach or Bok Choy: 1 cup optional

Instructions
 

  • Prepare the Broth: In a large pot, add the vegetable broth, miso paste, soy sauce, garlic, and grated ginger. Stir well to dissolve the miso paste and bring everything together. Heat over medium heat, allowing the broth to come to a gentle simmer. This helps the flavors meld together beautifully.
  • Cook the Dumplings: While your broth is simmering, add the dumplings to the pot. If you're using store-bought dumplings, follow the package instructions for cooking. Typically, they will need about 6-8 minutes to cook through. If you're making homemade dumplings, ensure they are fully cooked and tender.
  • Add Tofu and Greens: Once the dumplings are cooked, gently add the tofu (cut into cubes) and spinach (or bok choy) into the broth. Let them simmer for another 2-3 minutes until the tofu is heated through and the greens are tender.
  • Finish with Green Onions: Just before serving, sprinkle the sliced green onions on top. They’ll add a fresh, aromatic crunch that enhances the flavor and color of the soup.
