Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes, then cut them into bite-sized cubes or wedges.
  • In a large bowl, combine miso paste, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic. Mix until smooth.
  • Add the sweet potatoes to the bowl and toss well to ensure they are fully coated with the miso mixture.
  • Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and caramelized.
  • Once done, remove from the oven and sprinkle with sesame seeds and chopped scallions before serving.
