- 2 tablespoons mustard Dijon or yellow
- 4 cups vegetable broth
- 1 medium onion chopped
- 2 medium carrots peeled and chopped
- 2 cloves garlic minced
- 1/2 cup heavy cream
- Salt and pepper to taste
Sauté the Vegetables: Heat oil in a pot, add chopped onion and carrots, and cook for 5-7 minutes until softened. Stir occasionally.
Add the Garlic and Mustard: Once the vegetables are tender, add minced garlic and cook for 1-2 minutes. Stir in mustard and cook for another minute.
Pour in the Broth: Add vegetable broth, stir, and bring to a simmer for 10 minutes until carrots are soft.
Blend the Soup: Use an immersion blender or regular blender to blend the soup until smooth and creamy.
Finish with Cream: Stir in heavy cream and simmer for 2-3 minutes. Adjust seasoning with salt and pepper.
Serve: Ladle the soup into bowls and serve hot, garnished with fresh herbs if desired.
