Ingredients
  

For the marinade

  • 1/2 cup peri peri sauce store-bought or homemade
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

For the chicken

  • 4 pieces chicken thighs bone-in and skin-on
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation and Marination

  • In a large bowl, mix together the peri peri sauce, olive oil, minced garlic, smoked paprika, lemon juice, salt, and pepper.
  • Add the chicken thighs to the bowl, ensuring each piece is generously coated in the marinade.
  • Cover and refrigerate for at least 2 hours, or ideally overnight to allow flavors to develop.

Cooking

  • Preheat your grill or oven to medium-high heat.
  • Remove the chicken from the marinade, letting any excess drip off.
  • Place the chicken skin-side down on the grill or a baking sheet.
  • Grill for about 15-20 minutes per side, or until the internal temperature reaches 165°F (75°C). If baking, cook for 40-45 minutes, flipping halfway through.
  • Once cooked, let the chicken rest for a few minutes before serving.
  • Garnish with fresh parsley if desired before serving hot.
