Ingredients
  

For the Chicken Marinade

  • 2 pounds boneless chicken thighs
  • 1 cup buttermilk Marinate the chicken for at least 1 hour, preferably overnight.

For the Breading and Seasoning

  • 1 cup all-purpose flour
  • 2 tablespoons cayenne pepper Adjust to taste.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Vegetable oil for frying About 1 inch in a deep skillet.

For Assembly

  • Hamburger buns Soft and fresh.
  • Dill pickles For topping.
  • Coleslaw (optional) Adds a cooling element.
  • Hot sauce (optional) For serving or drizzling.

Instructions
 

Marinating Chicken

  • Marinate the chicken thighs in buttermilk for at least 1 hour, preferably overnight.

Preparing Breading

  • In a large bowl, mix flour, cayenne pepper, garlic powder, onion powder, paprika, salt, and black pepper.
  • Remove chicken from buttermilk, letting excess drip off, then dredge in the seasoned flour.

Frying Chicken

  • Heat vegetable oil in a deep skillet over medium-high heat.
  • Fry chicken in batches for about 5-7 minutes per side until golden brown and cooked through, reaching at least 165°F internally.
  • Remove cooked chicken and let drain on a paper towel-lined plate.

Preparing Hot Sauce

  • Mix additional cayenne pepper with some of the frying oil to create a hot sauce.
  • Brush or drizzle hot sauce over the fried chicken.

Assembling Sandwiches

  • Assemble the sandwiches by placing spicy chicken on buns and topping with dill pickles and coleslaw (if using). Serve immediately.

Notes

To keep chicken warm while frying, place cooked pieces in a warm oven at 200°F. Consider adjusting spice levels to personal taste and adding fresh herbs for garnish.
