Wet Ingredients

  • 1/2 cup vegan butter or coconut oil For a dairy-free option.
  • 1/2 cup plant-based milk Almond or soy milk works well.
  • 1 tsp vanilla extract Adds flavor.

Preparation

  • In a large mixing bowl, combine the old-fashioned rolled oats and unsweetened cocoa powder. Mix well to evenly distribute.
  • In a saucepan over medium heat, combine the granulated sugar, vegan butter or coconut oil, plant-based milk, vanilla extract, and sea salt.
  • Stir constantly until the mixture begins to boil. Once boiling, let it cook for one minute while continuing to stir.
  • Remove the saucepan from heat and pour the hot mixture over the oats and cocoa powder. Stir until well coated.
  • Allow the mixture to cool slightly before dropping spoonfuls onto a lined baking sheet. Shape into cookies.
  • Let the cookies set at room temperature until completely cooled, about 30 to 60 minutes.

Notes
