  • 1 stick 1 stick (½ cup) butter
  • 1.67 cups 1⅔ cups granulated sugar
  • 0.5 cup ½ cup milk
  • 0.25 cup ¼ cup unsweetened cocoa powder
  • 1 cup 1 cup creamy peanut butter Use smooth peanut butter for best texture.
  • 2 teaspoons 2 teaspoons vanilla extract
  • 3 cups 3 cups quick oats Can substitute with rolled oats for a chewier texture.
  • 0.25 teaspoon ¼ teaspoon salt

Preparation

  • Combine the quick oats and salt in a large mixing bowl, mixing well.
  • In a medium saucepan, combine butter, granulated sugar, milk, and cocoa powder over medium heat, stirring continuously.
  • Once it reaches a boil, let it boil for one full minute without stirring.
  • Remove from heat and add peanut butter and vanilla extract, stirring until smooth.
  • Pour the mixture over the oats in the mixing bowl, stirring until well combined.
  • Prepare a baking sheet with parchment paper and drop spoonfuls of the mixture onto the sheet.
  • Let the cookies cool at room temperature for about 30 minutes, then refrigerate for 1 hour to set.

Notes

Store in an airtight container at room temperature for a couple of days or in the fridge for best results. For longer storage, freeze between parchment paper for up to two months.
