  • 1 teaspoon vanilla extract

Preparation

  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine shredded coconut and rolled oats.
  • In another bowl, mix almond butter, honey, vanilla extract, and a pinch of salt until smooth.
  • Pour the wet mixture over the dry ingredients and stir until well combined.
  • If using chocolate chips, fold them into the mixture.
  • Drop spoonfuls of the mixture onto the prepared baking sheet and gently press down to shape into cookies.
  • Refrigerate for about 30 minutes to firm up.
