Ingredients
  

For the crust

  • 1 1/2 cups gingerbread cookies (crushed) Use your favorite brand or homemade.
  • 1/4 cup unsalted butter (melted) Ensure it's fully melted for easy mixing.

For the cheesecake filling

  • 1 1/2 cups cream cheese (softened) Let it sit at room temperature for easier blending.
  • 1/2 cup powdered sugar Adjust for sweetness to taste.
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 teaspoon ground ginger Use fresh ground for stronger flavor.
  • 1 teaspoon ground cinnamon Add more if desired for a spicier taste.
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/4 cups heavy cream (whipped to stiff peaks) Chill your mixing bowl for best results.

For garnish

  • Whipped cream For topping.
  • Crushed gingerbread cookies For garnish.
  • Mini gingerbread men cookies For decoration.
  • Ground cinnamon For dusting.

Instructions
 

Preparation

  • In a medium-sized bowl, combine crushed gingerbread cookies with melted butter until fully coated.
  • In a large bowl, beat softened cream cheese until smooth and creamy.
  • Gradually mix in powdered sugar, vanilla extract, ground ginger, ground cinnamon, ground nutmeg, and ground cloves until well combined.
  • Gently fold in the whipped heavy cream until just combined.

Assembly

  • Layer the gingerbread crust mixture at the bottom of individual cups.
  • Add a layer of the cheesecake filling on top of the crust.
  • Continue layering until the cups are filled, finishing with the cheesecake filling.
  • Refrigerate for at least 2-4 hours.

Serving

  • Decorate with whipped cream, crushed gingerbread cookies, and a mini gingerbread man.
  • Dust with ground cinnamon before serving.
