  • 1/2 cup chocolate chips Dark chocolate chips can enhance the flavor.
  • 1/4 cup unsweetened cocoa powder Adjust based on chocolate preference.
  • 1/2 teaspoon vanilla extract

Preparation

  • Line a baking sheet with parchment paper.
  • In a medium-sized bowl, combine the creamy peanut butter and honey (or maple syrup) until smooth.
  • Add the rolled oats, cocoa powder, vanilla extract, and salt to the mixture and stir until well combined. The mixture should be thick and sticky.
  • Fold in the chocolate chips until evenly distributed.
  • Scoop out portions of the mixture and form them into small cookie shapes. Place each cookie onto the prepared baking sheet.
  • Place the baking sheet in the refrigerator and allow the cookies to chill for at least 30 minutes to firm up before serving.

Notes
