Ingredients
  

For the cheesecake filling

  • 1 cup cottage cheese Blend until smooth
  • 1/2 cup natural peanut butter Can substitute with almond or cashew butter for variation
  • 1/4 cup honey or maple syrup Adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt Adds creaminess
  • 1/4 cup powdered sugar Optional, for extra sweetness

For the crust

  • 1/2 cup crushed graham crackers Use gluten-free alternatives if necessary
  • 1 tablespoon melted coconut oil
  • a pinch salt

For serving

  • Optional toppings: chocolate chips, crushed nuts, or fresh fruit Customize as desired

Preparation

  • Begin by blending the cottage cheese in a food processor until it becomes smooth.
  • Add the peanut butter, honey or maple syrup, vanilla extract, Greek yogurt, and powdered sugar to the blended cottage cheese. Blend until all the ingredients are well combined and creamy.
  • In a small bowl, mix the crushed graham crackers with melted coconut oil and a pinch of salt to create the crust.
  • Prepare serving cups or small jars by dividing the crust mixture evenly among them, pressing it down at the bottom to form a solid base.
  • Spoon the peanut butter cheesecake filling on top of the crust evenly among the cups.
  • Refrigerate the cups for at least 2 hours to allow them to set properly.
  • Once they are chilled and firm, garnish with your favorite toppings like chocolate chips, crushed nuts, or fresh fruit.

Notes
