Ingredients
  

Wet Ingredients

  • 1 cup cottage cheese Use low-fat or regular cottage cheese.
  • 3 large eggs Room temperature eggs work best.
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup Optional for extra sweetness.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups finely grated carrots Freshly grated for best results.
  • 1/2 cup whole wheat flour Can substitute with regular or gluten-free flour.
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts Optional.
  • 1/2 cup raisins or dried fruit Optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper.
  • In a large bowl, mix the grated carrots and cottage cheese until well combined.
  • Add the eggs, applesauce, and honey or maple syrup (if using) to the bowl and whisk until smooth.
  • In another bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just blended, avoiding overmixing.
  • Fold in nuts and raisins if using.
  • Pour the mixture into the prepared baking dish and spread it evenly.

Baking

  • Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool in the pan before cutting them into squares.

Notes
