Ingredients
  

  • 100 g unsalted butter softened
  • 150 g brown sugar packed
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional
  • 100 g plain flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 125 g oats
  • 75 g raisins

Instructions
 

  • Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • In a medium bowl, combine flour, cinnamon, baking powder, and salt.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  • Add the egg, vanilla extract, and almond extract. Beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the oats and raisins until evenly distributed throughout the dough.
  • Shape the dough into 12 equal-sized balls and place them on the prepared baking sheet, spacing them apart.
  • Bake for 10-12 minutes, until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
