Instructions
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a medium bowl, combine flour, cinnamon, baking powder, and salt.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
Add the egg, vanilla extract, and almond extract. Beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the oats and raisins until evenly distributed throughout the dough.
Shape the dough into 12 equal-sized balls and place them on the prepared baking sheet, spacing them apart.
Bake for 10-12 minutes, until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
