Instructions
Preheat oven to 180°C (350°F). Lightly grease a loaf pan.
In a blender or food processor, combine rolled oats, mashed bananas, eggs, maple syrup, and baking soda. Blend until smooth.
Fold in chocolate chips if using.
Pour batter into the prepared loaf pan and spread evenly.
Bake for 35-40 minutes. Test doneness by inserting a skewer into the center; it should come out mostly clean.
Allow bread to cool completely in the pan before slicing.
Notes
Feel free to add nuts, seeds, or dried fruit to customize your bread. Overripe bananas add more sweetness and flavor.
