  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Cream Filling Ingredients

  • 1 cup granulated sugar For the cream filling
  • 0.5 cup unsalted butter For the cream filling
  • 1 teaspoon vanilla extract For the cream filling
  • 2 cups powdered sugar
  • 1 tablespoon milk Adjust for desired creaminess

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a bowl, combine the rolled oats and boiling water. Let sit for about 20 minutes to soften.
  • In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Blend in the softened oats until fully incorporated.
  • Gradually add the dry ingredient mixture to the wet mixture, mixing just until combined.
  • Pour the batter evenly into prepared cake pans.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center.
  • Allow cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.

Cream Filling

  • For the cream filling, beat together softened butter and granulated sugar until smooth.
  • Mix in vanilla extract and powdered sugar, adjusting with milk until you reach your desired consistency.

Assembly

  • Once cakes are completely cool, spread a generous layer of cream filling on top of one cake layer.
  • Place the other layer on top and frost the top and sides of the cake with the remaining cream filling.
