  • 2 tablespoons ghee or oil of your choice
  • 1 teaspoon cumin seeds
  • 1 pinch hing (asafoetida)
  • 1/2 cup onion, finely chopped
  • 1-2 pieces green chilies, finely chopped adjust based on spice preference
  • 1 teaspoon ginger, minced
  • 1/2 cup tomatoes, finely chopped
  • 1 cup mixed vegetables (carrot, beans, green peas)
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chili powder
  • to taste none Salt
  • 1/2 cup split moong dal (yellow lentils) rinsed
  • 1 cup rolled oats rinsed
  • 4 cups water
  • 2 tablespoons coriander leaves, chopped for garnish

Preparation

  • Prepare Your Equipment: Begin by placing your Instant Pot or pressure cooker on the counter.
  • Heating the Ghee: Press the SAUTE button on your Instant Pot and pour in the ghee once it heats up.
  • Sautéing Spices: Add the cumin seeds and hing into the hot ghee until the cumin splutters.
  • Adding Onions: Toss in the chopped onions and sauté until they turn golden brown.
  • Incorporating the Heat: Add the green chilies and minced ginger, sautéing for another minute.
  • Tomato Time: Add chopped tomatoes and cook until they’re mushy, about 1-2 minutes.
  • Vegetable Medley: Add the mixed vegetables, turmeric, red chili powder, and salt. Stir for another minute.
  • Adding Lentils and Oats: Incorporate the rinsed moong dal and oats, sautéing for about two minutes.
  • Adding Water: Pour in four cups of water, stirring to prevent sticking.
  • Cooking Under Pressure: Close the lid securely and set the Instant Pot to PRESSURE COOK for 8 minutes.
  • Natural Pressure Release: Allow for a natural pressure release for 10 minutes, then release any remaining pressure carefully.
  • Final Touches: Open the lid and stir in coriander leaves. Add water if the porridge appears too dry.

Notes
