Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-Ins

  • 1 cup mixed dried fruits (like cherries, apricots, and raisins)
  • 1 cup chopped nuts (like walnuts and pecans)
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chocolate chips (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.
  • In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • Fold in the mixed dried fruits, chopped nuts, and coconut (if using) until evenly distributed.
  • Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes or until the edges turn golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
