Ingredients
  

Wet Ingredients

  • 1.5 cups mashed ripe bananas (about 3 bananas) Use overripe bananas for best results.
  • 1/3 cup melted coconut oil or melted butter Coconut oil adds a tropical flavor.
  • 1/4 cup full-fat coconut milk, yogurt, or sour cream Adds moisture to the bread.
  • 2 large eggs, lightly beaten Bind the ingredients together.
  • 1 teaspoon vanilla extract For added flavor.

Dry Ingredients

  • 3/4 cup dark muscovado or dark brown sugar For sweetness and richness.
  • 1 cup all-purpose flour Gives structure to the bread.
  • 1 cup whole wheat flour Adds nutty flavor and fiber.
  • 3/4 teaspoon baking soda Helps the bread rise.
  • 1/2 teaspoon fine grain sea salt Enhances flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and place a rack in the center.
  • Lightly grease a 9-by-5-inch loaf pan with oil.
  • Mash the ripe bananas in a large mixing bowl until smooth with some small chunks.
  • Add the melted coconut oil, dark muscovado sugar, and coconut milk to the mashed bananas, stirring until well combined.
  • Mix in the lightly beaten eggs and vanilla extract until everything is blended.
  • Gently add the all-purpose flour, whole wheat flour, baking soda, and sea salt. Mix until just combined, avoiding over-mixing.
  • Pour the batter into the prepared loaf pan and evenly distribute.

Baking

  • Bake in the preheated oven for about 50 minutes, or until golden brown and a toothpick inserted comes out clean.

Cooling and Serving

  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Slice and serve as desired.
