Ingredients
  

Main Ingredients

  • 4 pieces chicken thighs, skinless and boneless Quality chicken enhances flavor and tenderness.
  • 1 cup long-grain rice Brown rice can be used; adjust cooking time.
  • 2 cups chicken broth Use vegetable broth for a vegetarian version.
  • 1 piece bell pepper, diced Adds color and nutrition.
  • 1 piece onion, chopped Enhances flavor.
  • 2 cloves garlic, minced For additional flavor.
  • 1 can diced tomatoes (14 oz) Use with juice for flavor.
  • 1 cup black beans, drained and rinsed For added protein and texture.

Spices and Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil For cooking the chicken.

Garnish and Serving

  • Fresh cilantro For garnish.
  • Lime wedges For serving.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet or pan over medium heat.
  • Season the chicken thighs with salt, pepper, paprika, cumin, and thyme.
  • Add the chicken to the hot skillet and sear on both sides until golden brown, about 6-7 minutes per side. Remove the chicken and set aside.

Cooking

  • In the same skillet, add the chopped onion and bell pepper. Sauté until softened, about 3-5 minutes.
  • Add the garlic and cook for another minute.
  • Pour in the diced tomatoes with their juice and stir, scraping up any browned bits from the bottom of the pan.
  • Add the rinsed black beans and rice, mixing everything well.
  • Pour in the chicken broth, then place the chicken thighs back into the skillet, ensuring they are partially submerged in the liquid.
  • Bring the mixture to a gentle boil, then reduce heat to low and cover with a lid. Simmer for about 25-30 minutes, allowing the rice to cook and absorb the flavors.
  • Once the liquid is absorbed and the rice is tender, remove the skillet from heat. Let it sit covered for 5 minutes.
  • Before serving, fluff the rice with a fork and garnish with fresh cilantro and lime wedges.

Notes
