Preparation

  • Start by pouring the olive oil into a large pan, heating it over medium heat.
  • Sprinkle salt and pepper generously over the chicken thighs.
  • Carefully place the chicken thighs in the hot oil and cook for about 5 to 7 minutes on each side until golden brown.
  • Remove the chicken from the pan and set it aside on a plate.
  • In the same pan, add the minced garlic and ginger, sautéing for about a minute until fragrant.
  • Pour in the coconut milk and lime juice, stirring well to combine.
  • Return the browned chicken thighs to the pan, ensuring they are submerged in the sauce.
  • Cover the pan, reduce heat to low, and let it simmer for about 20 to 25 minutes until fully cooked.
  • Serve over rice or with steamed vegetables.
