  • 1 pound 93/7 ground beef lean ground beef to avoid excess grease
  • 3 cups thinly sliced cabbage
  • 1.5 cups thinly sliced red bell pepper
  • 3 cloves garlic, minced
  • 2 cups chicken stock
  • 3 tablespoons soy sauce
  • 3 tablespoons hoisin sauce
  • 2 (3-ounce) packages instant ramen noodles (seasoning packet discarded)
  • 1 cup matchstick carrots
  • to taste thinly sliced scallions, for garnish
  • to taste toasted sesame seeds, for garnish

Cooking

  • Heat a Dutch oven over medium-high heat and add the ground beef, breaking it apart with a spatula as it cooks for about 5-7 minutes until browned.
  • Stir in the sliced cabbage, red bell pepper, and minced garlic, and cook for around 3-4 minutes until the vegetables start to soften.
  • Pour in the chicken stock, soy sauce, and hoisin sauce. Bring the mixture to a boil.
  • Add the ramen noodles to the pot, cover, and let it simmer for about 5-7 minutes, stirring occasionally.
  • Once the noodles have absorbed the liquid and softened, add the matchstick carrots, cover, and let it sit for an additional 1-2 minutes.
  • Serve the ramen noodles in bowls garnished with sliced scallions and toasted sesame seeds.
