Ingredients
  

  • 2 cups whole milk
  • cups water or broth
  • 8 oz pasta of your choice (like elbow macaroni or rotini)
  • 8-10 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • ¼ cup plain Greek-style yogurt
  • 1 Tbsp butter or ghee (optional)

Instructions
 

  • In a large pot, combine whole milk and water or broth. Heat over medium-high until it reaches a gentle boil.
  • Stir in the pasta and reduce the heat to a simmer. Cover and cook for about 10 minutes.
  • Add the finely chopped broccoli and simmer for an additional 2 to 3 minutes, stirring occasionally.
  • Remove the pot from heat and stir in the shredded cheddar cheese, Greek yogurt, and optional butter until melted and creamy.
  • Serve immediately, garnished with additional cheese or herbs if desired.
