Ingredients

  • 1 to 2 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, not drained
  • 1 can (15 oz) tomato sauce or tomato puree
  • 1/3 cup tomato paste
  • 4 cups chicken broth
  • 1 tbsp Italian seasoning blend
  • 1 tsp sea salt, plus more as needed
  • Black pepper, to taste
  • 1 to 2 cups water, to adjust texture
  • 8 oz bowtie (farfalle) pasta, uncooked
  • ½ cup ricotta cheese
  • 2 oz mozzarella cheese, shredded
  • ¼ cup parmesan cheese, any style shaved, shredded, or grated
  • ¼ cup fresh parsley, chopped

Instructions
 

Cooking

  • Heat a 4.5-quart soup pot over medium-high heat and add olive oil. Allow the oil to warm up.
  • Add ground beef, diced onion, and minced garlic to the pot. Sauté until beef is browned and onions have softened, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in diced tomatoes, tomato sauce, and tomato paste. Then add chicken broth.
  • Sprinkle in the Italian seasoning, sea salt, and black pepper. Stir to mix.
  • Increase heat to bring the soup mixture to a boil. Once boiling, add uncooked bowtie pasta.
  • Reduce heat to medium and simmer for about 10 to 15 minutes, stirring occasionally.
  • When pasta is cooked, remove from heat and let cool slightly. Mix in ricotta, mozzarella, and parmesan cheese.
  • Garnish with freshly chopped parsley before serving.

Notes

For added flavor, pair with garlic bread or salad. Offer additional grated parmesan and black pepper at the table.
