Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 large egg
  • 0.33 cup vegetable oil
  • 0.75 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1.5 cups fresh cranberries
  • 0.5 cup chopped nuts optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the egg, vegetable oil, orange juice, and orange zest.
  • Combine the wet ingredients with the dry ingredients. Stir gently until just combined. Do not overmix.
  • Fold in the cranberries and chopped nuts (if using).
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Feel free to swap any of the toppings or add-ins in the ingredient list with whatever you have on hand. It will probably taste just as amazing!
